Grain-free Biscuit

Makes 9 biscuits

Ingredients:
1/3 cup organic coconut flour
5 TBSP Butter or Coconut Oil, softened but not melted
4 large eggs
1/4 tsp sea salt
1/4 tsp baking soda
1/2 tsp apple cider vinegar
2 TBSP honey (optional)

Preheat oven to 400 degrees F
Put all ingredients into medium sized bowl and mix well with immersion blender or hand mixer until well incorporated
Using your hands, carefully form into nine small balls and mash each one down with a spoon to make it about ½ inch thick.
Bake for 12-15 minutes until just starting to brown.

Directions:
1. Preheat oven to 400 degrees. Line large baking sheet with parchment paper. Mix coconut flour, coconut oil, eggs, and salt together in mixing bowl. Add baking soda, then apple cider vinegar, and quickly mix to distribute throughout.

2. Drop rounded tablespoonfuls of batter onto baking sheet. Use back of spoon on your hands to spread batter into rounded disc shapes about 2 1/2-inches wide and 1/4-inch thick.

3. Bake 11-13 minutes, or until moist but cooked through. Cool 10 minutes before serving.
