Ingredients:
4 medium zuchinni
1 tbsp olive oil
1 1/2 cups minced onion
1 tsp salt
6 medium cloves garlic
1/2 lb mushrooms, minced
1 1/2 cups cooked rice
1 1/2 cups finely minced almonds
3 tbsp lemon juice
black pepper and cayenne, to taste

Directions:
1. Sauté onion and salt in olive oil for 5-8 minutes
2. Add zucchini, mushrooms and sauté for 8-10 minutes
3. Add garlic the last few minutes
4. Mix in rice and almonds. Add lemon juice.
5. Add black pepper and cayenne to taste.
